Very nice too, and it will take you instantly back to your childhood.  Orange jelly works well but could use any other of course.

Melt one jelly in half a pint of boiling water.

Whisk one small tin evaporated milk with 1 tablespoon of sugar, until light and fairly thick and increased in volume - about 5 mins with an electric beater.

Whisk in the dissolved jelly until frothy and bubbly.  Put to set in the fridge.


When I've made this, it tends to set in two, or even three layers - one of clear, jewel-like  jelly and one bubbly, frothy souffle.  I think this adds to its beauty, especially if you turn it out of the bowl onto a pretty plate, and you could pass it off as something really expensive from M &S.

Interesting how customs change. It used to be that people would buy M&S produce and pass it off as their own. :)

Poor old Jay is grateful for this jelly and I've been making it almost daily, in various shades.    Since having her brace fitted and cranked up weekly to new levels of pain and torment, she can't chew her way through steak and chips the way she used to. so is back to an infant diet    :(
