I made this yesterday because we had about 15lb of carrots in the fridge and I saw some reduced coriander at Budgens.  It was really, really, really nice (and I don't even like soup that much)

A flavoursome vegetarian soup with fresh and ground coriander. Serve with cheese and onion bread for a warming supper or lunch.
Ingredients

1 tbsp vegetable oil (I used olive oil flavoured with chillies but onl ybecause I had some to use up)
1 onion, sliced
450g/1lb carrots, sliced
1 tsp ground coriander (I didnt have any of this so didn't use)
1.2 litresl/2 pints vegetable stock
large bunch fresh coriander, roughly chopped
pinch sugar, salt and freshly ground black pepper

Method

1. Heat the oil in a large pan and add the onions and the carrots with a pinch of sugar. Cook for 3-4 minutes until starting to soften.
2. [Stir in the ground coriander and] season well. Cook for 1 minute.
3. Add the vegetable stock and bring to the boil. Simmer until the vegetables are tender (about 20-30 mins)
4. Whizz with a hand blender or in a blender until smooth. Reheat in a clean pan, stir in the fresh coriander and serve.


It was really nice the next day too, but there was only enough left for one  :cry

I could never understand the point of making soup when they sell it in tins.

so much cheaper and easier.

A pinch of sugar is interesting I haven't seen that idea before.

A pinch of salt is in all sorts of recipes and it does matter to cakes.

Sounds scrumptious.

I am a great fan of soup, and the Thingummie family agrees.

Although I like a hint of garlic in my carrot soup, since carrots are so sweet already.

But corriander is a great suggestion.

BF, there are a lot of soups that don't come in tinned form. And if you buy a lot of fresh veggies, or have truckloads all at once when they ripen in the garden, cooking soup is a must to use up the excess. And I do think freshly cooked soup tastes better.

I hate tinned soup, really don't like it at all.  Home-made soup on the other hand - scrumptious   :love

I always put a tiny pinch of sugar in with onions when frying - it brings out their flavour.

I wish we had truckloads of spare veg ripening in the garden Asy!  However at least we have planted 5 trugs of potatoes and two rows of peas - it's a start :lol
